Tokaj the magical land of volcanoes, has been quietly resting for the past ten million years.


After more than two decades here, Sauska is more than obsessed with Tokaj's strength, its diverse and resilient beauty. Several thousand combinations of soil types with myriad mineral compositions, hardness, water, and root transmissivity: a magical place to grow grapes. By tradition grapes for the legendary Aszú wine. But Sauska had something else in mind.

It is no secret that the indigenous Furmint and Hárslevelű make wonderfully vibrant dry wines. But Sauska was also very keen to learn how Chardonnay and Pinot Noir would perform on the immensely diverse volcanic soil. In 2005, world-renowned French soil specialists Lydia and Claude Bourguignon came to help understand and categorize the Sauska land with a deliberate dry wine focus.




“Our vineyard preference is certainly different from a sparkling wine perspective. High elevation, breezy plateaux perform wonderfully well when it comes to giving crisp, lean minerality. It feels like I am looking through a kaleidoscope and see a newly-structured reality.”

After accurate analysis and several years of precise replanting we have not only created our own vineyard classification system but also decided to revitalize five vineyards that became the core of our new sparkling wine concept.

“We are very excited about the chalky patches on many of our vineyards. However, I do not think they are the magic X-factor that makes our wines so alluring. The vast volcanic minerality and our excentric Furmint grape have a few words of their own to add to the story.”
