What is your Tokaj vision?
My Tokaj is not about the Aszú or the Furmint grape per se. It is about showing character and quality
at many levels in still wines and of course, sparkling. Sparkling wine to me is the finest instrument
to showcase what this world-class terroir is capable of. Creating the right vineyard structure for
sparkling wine is an extremely complex and beautifully diverse process involving analytical and
instinctive elements. To me, Régis is the perfect partner in crime on this journey.
Do you have a different approach when it comes to sparkling wine?
In a way, I am very simple-minded. I like to analyze, understand, compare. Modify, reanalyze,
understand the changes and compare again. This is the most important thing I preach about all the time
to our young team: record precisely what we do so you have data to compare. Modern winemaking is
scientific and I like it. People need to understand that the world of facts can be just as magical as the
world of senses. No contradiction here. They are connected.
What do you enjoy the most in the process?
I am truly impressed by the art of blending. The patience one has to have if one wants to reach
perfection! Nothing in this venture is immediate: nature takes its time, then the vinification process
and the understanding of the singular expression of each plot, then collecting reserve wines year after year, then the blending and then… again… time
on the lees to attain the sparkling style we want. Making wine in Tokaj taught me a lot about patience
but this is clearly beyond it.
Where do you see us being in 5 years?
In 5 years? I am planning to sit under the tree with Régis. The sparkling wine in our glasses will be a
beauty. Unquestionably Tokaj and unmistakably Sauska.
